For red wines, the first phase of fermentation is done with the grapes (the skins, pips and sometimes stalks) and juice, then separating the juice / wine from grapes: the devatting.
Devatting a cement tank
For older tanks, the devatting is done manually at the fork. It is work hard enough : you must go fast not to breathe too much alcohol vapor (even if the ventilator brings fresh air, you quickly feel dizzy).
